Gentrification, and a more Jerusalem-specific process, Anglicization, spread quickly in the Holy City, with an ever-increasing number of English immigrants and wealthy vacation home buyers arriving in the city. The Anglo population of the German Colony has been spilling over into adjoining neighborhoods, and Baka's still somewhat sleepy Beit Lechem Street is rapidly turning into the new version of the German Colony's Emek Refaim. And what does any neighborhood with a lot of Anglos need? A bagel shop catering to their tastes. And Baka has one, in the form of Bagel Bite, a shop occupying the corner of Beit Lechem and Yehuda streets. Bagel Bite was founded by Israeli expatriates to New York who established a restaurant of the same name in Albany before returning to their home country – fortified with the knowledge of how to make bagels American-style. The amount of bagel-loving Anglo regulars at Bagel Bite is a testament to their success.
