Like most Mediterranean peoples, Israelis have a voracious appetite for flatbread, that most versatile of staples. But Israelis are not content with merely their own dizzying array of breads hailing from Ethiopia to Yemen to India – ever the culture vultures, they appropriate other Mediterranean breads into their culinary aesthetic. And no bread has been as eagerly embraced as the Italian focaccia, to the point where one of Jerusalem's most popular restaurants is named for it.

Focaccia Bar, like most Israeli establishments with the word "bar" in their names, is not really a bar, but is a spacious, family-friendly restaurant built around a patioed garden, one corner of which is occupied by a tabun oven which churns out the restaurant's namesake focaccia that comes hot with every meal with a choice of dips and toppings.

If you don't fill up on bread, Focaccia offers a decidedly non-kosher international fusion menu, including pizzas, burgers, seafood, stir-fries and more. Focaccia Bar is also probably one of the only places in Jerusalem that serves its lemonade pink.
